A simple addition for a snack plate (with the sundried pesto dip) or on top of a salad to add crunch and flavour.
2 Tb Sunflower seeds
3 Tb Pepita seeds
1 Tb Sesame seeds
Canola or Olive oil spray
Chilli flakes, salt and pepper
1. Spray oil into a medium fry pan over high to moderate heat.
2. Add pepitas and sunflower seeds, stir and allow to cook for 5 minutes ( stirring occasionally until they start to brown).
3. Spray with oil again, add salt, pepper, chilli flakes and sesame seeds. Mix together and allow to cook for another 2 minutes (keep mixing so it doesn't start to burn). You may need to add more oil.
4. Once seed mixture is hot and pepitas start to change colour remove from heat and place into a bowl.
