Perfect as a side dish to a simple green salad or as an addition to a hot winters meal.
Ingredients:8 small to medium potatoes
1 Tsp salt
1 Tb olive oil
1/2 Tsp paprika
1/4 Tsp pepper
A sprinkle of fresh rosemary chopped (or dried)Method:1. Preheat oven to 180C
2. Combine paprika and pepper in a bowl, mix in salt then set aside. Peel the potatoes and cut each potato into even bite sized pieces, place into a mixing bowl.
3. Using your hands mix the dry seasoning and the potatoes together, gently rub seasoning into some of the potatoes as you go.
4. Sprinkle the olive oil over the potatoes, mix and place evenly onto a baking tray
5. Bake for 20 minutes before sprinkling the rosemary over the top of potatoes, they may need another 5-10 minutes depending on your oven.
Potatoes are ready when they start to brown slightly.
