Have plain with almond/ soy milk at Breakfast or add to fruit/ soy yoghurt (or with our Chia Fruit Bowl recipe) as snack to increase texture and add extra flavour.
4 sliced dried figs
5 sliced dried apricots
1/4 cup chopped walnuts
1/2 cup rolled oats
handful of almonds (with or without skin)
3 Tb pepitas
3 Tb sunflower seeds
2 Tb pine nuts
3 Tb dried cranberries (Craisins low sugar)
1. Preheat oven to 180C
2. Evenly spread your rolled oats across the baking tray and lightly spray with oil, place into the oven for 10 minutes to toast.
3. Slice the apricots and figs and place into a bowl with pepitas, cranberries, pine nuts, sunflower seeds and walnuts.
4. Spread and mix the chopped dried fruit, nuts and seeds with rolled oats on the baking tray, spray with oil again and leave for a further 5-10 minutes (you want the rolled oats to be slightly golden).
