A yummy high fibre summer dish that makes it easy to get in two serves of fruit. Use as a sweet breakfast, snack or dessert dish.
1/4 cup white Chia seeds
1/2 cup tap water (or can use apple juice)
1 Tsp cinnamon
1 Tsp vanilla essence
1 red or green apple
1/2 cup blueberries (or 1/2 cup mixed frozen berries)
A drizzle of maple syrup
1. Place chia seeds and water in a bowl with vanilla essence, sprinkle cinnamon over the top and leave over night (or for at least 15 minutes).
2. Chop all fruit into bite sized pieces and place into a bowl (like a simple fruit salad)
3. Mix chia seed in with the fruit and drizzle with maple syrup, serve as a light sweet breakfast option or pack as a mid morning snack.
We also like to sprinkle mixed walnuts or almonds over the top for extra crunch.
