A sweet warm dessert dish for winter. I have also used this as a mid morning snack with a tablespoon of soy yoghurt.
Ingredients:4 Red apples
1 cup oats
1/4 cup LSA
1/3 cup White sugar
2/3 cup Mixed frozen berries
60g Nuttelex
Sprinkle of cinnamon sugar
1/2 Tb Vanilla essence
Canola spray oil
1 small tub coconut or soy vanilla yoghurt (if desired)Method:1. Chop and dice the red apples removing the core (leave the skin on for extra fibre).
2. Place apples into a bowl, drizzle with vanilla essence and lightly dust with the cinnamon sugar. Mix together then microwave for approx 1-2 minutes (you want the apples to be soft but not soggy or mushy).
3. While the apples are cooking pre-heat oven to 180 degrees.
4. In a second bowl mix together the LSA, sugar and oats. Melt the nuttelex in the microwave and add to the dry mixture.
5. Evenly spread the cooked apples across the bottom of a heat proof baking dish. Sprinkle the berry mixture on top.
6. Carefully spread the oat, sugar and LSA mixture over the apples. Lightly spray the top with a canola oil.
7. If needed sprinkle more cinnamon sugar over the dish (optional).
8. Place baking dish into the oven and bake for 20-25 minutes (until the top begins to turn a golden colour).
Serve plain or with a dollop of coconut/ soy yoghurt on the side.-
